Highland Park traces its roots to 1798 and Magnus Eunson. He was a local man who distilled on the site illegally, before the distillery gained a licence in 1826. It stands in Kirkwall, the main town on Orkney, off the far north coast of Scotland.
So, despite its name, Highland Park is an island malt and not a Highland one. Edrington has owned it since 1979, and the same group also owns Macallan. Two things shape the Highland Park taste. First, the distillery uses local Orkney peat. This peat has a high share of heather, so the smoke tastes sweet and floral.
